For the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Premix (yields 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, to finish
Instructions
Making the Cordial: Combine all the components in a pan, bring to a simmer, stirring until the sugar dissolves. After that, remove from the stove allowing it to cool down completely. Decant into an sterilised bottle, close it and refrigerate it in the refrigerator, it can be stored for around one month.
Preparing the Cocktail Base: Combine all the liquid ingredients into a big jug, let it rest for one hour, then filter it best through muslin, so it's perfectly clear.
For serving: Add 85ml of your batch mix into a mixing glass containing ice, and stir carefully for about 60 seconds to chill. Filter to a chilled martini glass or a similar vessel, decorate with some cranberries and finish by giving it a quick spritz of mandarin oil above the glass.
